5 Classic Holiday Cookie Recipes plus Cookie Making Tips

When it comes to the Holidays, I always look forward to baking some cookies for my family. I tend to go overboard with baking cookies. I usually bake 12-14 different varieties.
I would like to share a few cookie making tips with you today.
1. Unbaked dough can be covered and refrigerated for up to 24 hours. Dough can also be frozen for up to 9 months.
2. Dip cookie cutters in flour or confectioner’s sugar, shake off excess before cutting out cookies.
3. Line your baking sheets with Parchment Paper or a Silicone Baking Mat to make clean up easier.
4. Spray your spoon with non-stick cooking spray. This will help the dough to slide off easier.
5. Spray your beater blades with non-stick cooking spray to help prevent dough from sticking on them.
6. Remove your cookies from the oven 1-2 minutes before the recommended baking time. They will finish baking on the baking sheet.
Sugar Cookies
5 c. flour
2 tsp. vanilla
1 tsp. baking powder
2 c. sugar
3/4 tsp. baking soda
2 eggs
1 1/2 c. milk
1 c. butter
Cream sugar and butter together. Add vanilla and eggs, beat until well blended. Stir in milk, baking soda and baking powder. Slowly mix in flour. Drop by tablespoonful onto greased cookie sheet. Sprinkle on any desired toppings. Bake for 350 degrees for 12 minutes.
Chewy Chocolate Chip Cookies
1 c. shortening
1 c. butter
2 c. brown sugar
1 tsp. vanilla
4 c. flour
2 tsp. baking soda
1 tsp. salt
1 c. sour cream or buttermilk
1 lg. package of chocolate chips
Mix all ingredients together. Drop by the teaspoonful onto a baking sheet. Bake at 350 degrees for 10-12 minutes.
Peanut Butter Cookies
3/4 c. creamy peanut butter
1/2 c. shortening
1 1/4 c. light brown sugar
3 tbsp. milk
1 tbsp. vanilla
1 egg
1 3/4 c. flour
3/4 tsp. salt
3/4 tsp. baking soda
Combine peanut butter, shortening, light brown sugar, milk and vanilla in a large bowl. Beat at medium speed until blended. Add egg. Beat again. Combine flour, salt, and baking soda at low speed until blended. Drop by teaspoonful onto baking sheet. Flatten slightly in crisscross pattern with tines of a fork. Bake at 350 degrees for 8 minutes.
Pecan Sandies
1 c. butter or margarine
1/4 c. granulated sugar
2 tsp. vanilla
2 c. all-purpose flour
1 c. chopped pecans
1/4 c. confectioner’s sugar
Beat butter for 30 seconds; add granulated sugar and beat till fluffy. Add vanilla and 2 tsp. water; beat well. Stir in flour and pecans. Shape into 1″ balls. Place on a ungreased cookie sheet. Bake in a 325 degree oven for about 20 minutes. Cool completely. Sprinkle cooled cookies with a light coating of confectioner’s sugar.

Good Old Fashioned Cookie Recipes

Here are a couple of great cookie recipes from my vintage recipe collection. The first is for an ethnic cookie–Swedish Heirloom Cookies. These cookies are not only tasty but would be great as holiday cookies as they can be decorated to suit the occasion. The other is a Banana Oatmeal Cookie that is a healthy alternative to the usual cookies containing candy bits and chips. Get out the baking sheets and bake up a batch today. You’ll be glad you did! Yummy!
SWEDISH HEIRLOOM COOKIES
I could not find a date on the old cookbook from where I first got this recipe. It did have a price of 15 cents factory printed on the front cover so it is obviously very old.
Bake at 325 degrees for 15 to 18 minutes.
Cream……1 cup butter. Gradually add 1 cup unsifted confectioners’ sugar and 1/2 tsp salt, creaming well.
Add……..1 1/4 cups almonds, ground, and 1 tablespoon vanilla.
Blend in…2 cups sifted all-purpose flour* gradually, mix thoroughly.
Shape……dough into balls or crescents, using a rounded teaspoonful for each cookie
Place on ungreased baking sheets. If desired,sprinkle with colored candies
Bake…….in 325 degree oven 15 to 18 minutes. Cookies will not be brown when done.
*If you are using self-rising flour (sold in parts of the south), omit the salt.
If you did not decorate the cookies, you may roll them in confectioners’ sugar while they are warm.
Makes about 4 1/2 dozen.
BANANA OATMEAL COOKIES
Go back to this old-fashioned recipe for a cookie to make for the kids. It is tasty, nutrious, and much better for your family than chocolate chips and/or candy bits.
3/4 cup butter, room temperature
1/2 cup packed brown sugar
1 1/2 cups flour
1 tsp salt
1/2 tsp cinnamon
1 cup oats, dry
2 large ripe bananas, coarsely mashed
1/2 cup sugar
1 egg, room temperature
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp vanilla
Preheat oven to 375 degrees. Grease cookie sheets. In a large mixing bowl, cream butter and both sugars. Add egg and beat until fluffy. Sift together flour, baking powder, salt and spices; add to butter mixture and mix well. Stir in oats, vanilla, and banana. Drop by tablespoon two inches apart on cookie sheets. Bake 12 to 15 minutes until golden in color. Cool on a wire rack.

If your family is like mine, you just can’t have enough chocolate around the house. Is there anything better than a warm chocolate chip cookie fresh from the oven? Not much, in my opinion! This Chocolate Chip Cookie from the good folks at Hershey’s is easy and delicious. Even beginning bakers or the kids can turn out a good cookie with this recipe. The other cookie recipe is for Chocolate Pecan Cookies. What a perfect combination! I don’t know about you but that is two of my favorite things. Next time you have a yen for a good cookie, get out the flour, sugar, cookie sheets, etc and get busy. In a matter of minutes your house will smell wonderful and you’ll be taking some wonderful cookies out of your oven.
HERSHEY’S CHOCOLATE CHIP COOKIES
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 tsp vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups (12 oz pkg) semi-sweet chocolate chips
1 cup chopped nuts, optional
Preheat oven to 375 degrees.
In a large mixing bowl, beat butter, granulated sugar, brown sugar, and vanilla until creamy. Add eggs; beat well. Stir together flour, baking soda and salt; gradually add to butter mixture, beating well. Stir in chocolate chips and nuts, if desired. Drop dough by rounded teaspoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until lightly browned. Cool slightly on pan then remove to wire racks to cool completely.
Yield: Approximately 6 dozen cookies
To make bar cookies, prepare as above but spread dough into a greased 15 1/2 x 10 1/2 x 1-inch jelly-roll pan. Bake at 375 degrees for 20 minutes or until lightly browned. Cool completely in pan on a wire rack. Cut into bars.

4 oz unsweetened chocolate
12 oz semisweet chocolate
1/4 cup butter
1 1/2 cups sugar

Combine the unsweetened chocolate, semisweet chocolate and butter in a double boiler over hot water. Heat, stirring often, until melted and well blended. Carefully pour into a bowl. Add the sugar and mix well. Add the eggs to the chocolate mixture, 1 at a time, mixing in well after each one. Beat in vanilla. Add the flour, baking powder, and salt; mix well. Stir in pecans. Line cookie sheets with foil and spray with nonstick cooking spray. Drop dough by 1/4 cupfuls onto the cookie sheets about 2-inches apart. Bake for about 12 minutes or until firm. Cool about one minute before removing to wire racks to cool completely.
