Hi everyone,
I’m in Eastern Europe, trying to find some good cookie recipes to make for friends/family here from local ingredients. Unfortunately…
– No brown sugar or unusual sweeteners (only white sugar)
– No shortening
– No peanut butter
– No chocolate chips (M&M’s are available and work as a good substitute, or chopping up chocolate bars)

Things that I have found that might be useful for recipes:
– Cream of tartar and cinnamon (I brought from the States)
– Butter, margarine, eggs, flour, milk, basic food stuffs like that
– Good selection of dried fruits and nuts
– Baking soda, baking powder, yeast
– There are lots of variations of condensed milk and caramelized condensed milk (dolce de leche) sold over here
– Corn flakes, cheerios
– Some candy bars: Snickers, milky way, twix, M&M’s (plain and peanut filled)

    PLAIN BISCUITS (COOKIES)

    225g/8oz self-raising flour
    pinch of salt
    150g/5oz butter
    100g4oz caster sugar or sifted icing sugar
    beaten egg to mix

    1. Sift the flour and salt into bowl.
    2. Rub in butter finely.
    3. Add sugar.
    4. Mix to very stiff dough with beaten egg.
    5. Turn out on to lightly floured board. Knead gently until smooth.
    6. Put into polythene bag or wrap in aluminum foil. Chill 30 minutes.
    7. Roll out fairly thinly. Cut into about 30 rounds with 5cm/2inch plain or fluted biscuit cutter.
    8. Transfer to buttered baking trays. P)rick biscuits well with fork.
    9. Bake in centre of moderate oven (180C/350F or gas mark 4) for about 12-15 minutes (or until pale gold).
    10. Leave on trays for 2-3 minutes. Transfer to wire cooling rack.
    11. Store in airtight tin when cold.

    WALNUT BISCUITS

    1. Follow recipe and method for plain biscuits.
    2. Add 40g/1 and a half oz very finely chopped shelled walnut halves with sugar and half tsp vanilla essence with egg. Cut into about 30 biscuits.

    ALMOND BISCUITS

    1. Follow recipe and method for plain biscuits
    2. Add 50g/2oz ground almonds with sugar,and half tsp almond essence with egg. Cut into 30-36 biscuits.

    LEMON OR ORANGE BISCUITS.

    1. Follow recipe and method for plain biscuits
    2. Add 1 level tsp finely grated lemon or orange rind with sugar.

    CURRANT BISCUITS

    1. Follow no. 1 as all above.
    2. Add 50g/2oz currants with sugar.

    CHERRY BISCUITS;

    1. follow no. 1 as above
    2. Add 50g/2oz very finely chopped glace cherries with sugar.

    SPICE AND CINNAMON BISCUITS;

    1. Follow no.1 as above.
    2. sift 1 and a half tsps mixed spice or cinnamon with flour and salt.

    COCONUT BISCUITS;

    1. Follow no. 1 as above.
    2. Add 50g/2oz desiccated coconut with sugar and half tsp vanilla essence with egg.

    CHOCOLATE FLAKE BISCUITS;

    1.
    follow no. 1 as above.
    2. Add 50g/2oz grated plain chocolate with sugar.

    SUGAR-TOPPED BISCUITS;

    1. Follow no. 1 as above.
    2. Before baking brush with lightly beaten egg white and sprinkle with caster sugar.

    CHOCOLATE DROPS;

    1. 100g/4oz softened butter
    2. 50g/2oz caster sugar
    half a tsp vanilla essence
    90g/3 and a half oz plain flour
    15g/half oz cocoa powder

    1. Cream butter with sugar and essence until light and fluffy.
    2. Stir in flour sifted with cocoa.
    3. Drop 18-20 tsps of mixture, well apart, on to buttered baking tray.
    4. Bake just above centre of moderately hot oven 190C/375F or gas no 5., for 17 minutes.
    5, Leave on tray 1or 2 minutes before transfering to wire cooling rack.
    6. Store in airtight tin when cold.

    The peanut butter cookies they are basically peanut butter cookies but you substitute nutella for the peanut butter also here is nutella for.
